Day 3. Dairy Dependency.
I am seriously dependent on dairy.
To a concerning degree.
I want to be vegan by December, 2013. Now, that might seem like a long time...ok it is. But I actually feel anxiety coming on when I think of a life without cheese. Case in point, I have cottage cheese, parmesan, monterey jack, white cheddar, goat, and 3 flavors of cream cheese in my fridge right now. They are all happily grated over or spooned into almost every meal of the day. They are my friends. And a tall glass of ice cold milk? Fuhgeddaboudit.
I was raised with dairy, also with meat. But I am not too worried about the vegetarian side of things. I pretty much find myself eating meat out of convenience or habit. With minimal effort and mindfulness, I can mostly eliminate it from my lifestyle. Why is this a goal of mine? I'd love to NOT sound like a radical right now, but yes, it's because of political, environmental, health, and humane reasons. Perhaps I'll elaborate further into the year. But I'll try to keep it within palatable increments.
For today, however, I am going to enjoy my whole wheat pasta, eggplant, broccoli, mushroom, bell pepper and parsley casserole made with...cream of mushroom soup & monterey jack.
